Tomato rice is a well known South Indian dish. It is super yummy and hearty food that you can eat everyday. Its cooking time is short, plus, tomato rice is a wholesome dish to share with your family. Aside from that, it is also great for gatherings, picnics, etc.
Even though there are numerous recipes on how to prepare tomato rice, utilizing fresh juicy tomatoes will aid in enhancing the taste of the dish. The flavorsome taste of tomatoes makes the entire dish enticing and irresistible. Best of all, it can be serve with chips, raita or pappads.
So let us head on to the kitchen and start this mouth watering dish.
For the needed ingredients:
1 cup basmati rice (add more cups if there are a handful of people on the dinner table)
4 fresh and ripe tomatoes (chopped finely)
1 medium sized onion (sliced thinly)
1 tablespoon minced garlic
Half tablespoon garam masala powder
¼ tablespoon turmeric powder
1 tablespoon red chilli powder (to spice up the dish, add more powder)
2 teaspoon coriander seeds (finely chopped)
¼ cup water
Sugar
Salt
Ingredients for seasoning:
1 bay leaf (small)
2 cloves
4 tablespoon ghee or butter
1 teaspoon cooking oil
Half tablespoon jeera or cumin seeds
Half an inch cinnamon
½ tablespoon mustard seeds
3 tsp cashew halves (optional)
5 curry leaves or kadi patta
1 cardamom
½ tsp fennel seeds
Directions:
1. Clean and rinse the basmati rice until clear or after 2 changes of water.
2. Cook the rice using cooker, then, wait for 3 to 4 whistles or until done. Make sure that you don’t over cook it. Allow to cool.
3. Heat the ghee and oil in a deep skillet. When it is hot enough, toss the mustard seeds. When the seeds start to pop, add the cumin seeds or jeera, fennel seeds, cloves, cinnamon, cloves, bay leaves, cardamom, cashew halves, curry leaves. Fry them all for one minute.
4. Add the onions and sauté for a few minutes or until golden brown. Toss the ginger and garlic into the mix. Stir and fry for approximately 3 minutes.
5. It is now time to add the chopped tomatoes, fry further until soft. Add the turmeric powder, chilli powder and garam masala powder, continue frying under medium flame.
6. Add water, salt and sugar. Cover for 4 minutes to allow the water to evaporate.
7. When the above ingredients are done, add the cooked rice. Gently mix using flat spatula. Sprinkle additional salt (adjust according to taste).
8. Cook the rice and tomato mixture for 3 minutes.
9. Garnish it with coriander leaves.
10. Serve and savor the taste.
