How to Prepare Broccoli Rabe?

Broccoli rabe is also popularly known as rapini, choy sum, brocoletto, broccoletti di rape, and Chinese flowering cabbage. This vegetable is commonly utilized in preparing certain cuisines, such as Galician, Italian, Chinese and Italian dishes.  Broccoli rabe is frequently described as having bitter, pungent and nutty taste.  But, it offers tons of health benefits.  This vegetable contains potassium, iron, vitamin K, vitamin C, vitamin A and calcium.  So, if you are looking for a healthy meal, broccoli rabe is definitely a wise choice.

Furthermore, this vegetable is truly worth your money, since all its parts can be eaten, from the leaves, stems, etc.  If you think that rapini is in any way related to the regular broccoli, it is actually not.  Broccoli rabe is mostly in abundance between late fall and early spring.

When buying this vegetable, choose those that are green with small stems and compact heads.  To prepare, clean the vegetable under cool running water.  After that, slice off the bottom of the stalks and discard.  Shortly, chopped off the stalks crosswise about 2 inches each pieces. Next, prepare a large pot with water and salt.  Bring to a boil.  And then, toss the broccoli rabe, cook for 2 minutes.  Remove.

Now that the broccoli rabe were blanched, you can use them for other recipes.  One very simple cooking you could make is sautéed the vegetable.  This is perfect for health conscious individuals.

Ingredients:

  • 1 bunch broccoli rabe
  • 2 teaspoon olive oil
  • 1 clove garlic
  • 1 onion
  • 1/3 cabbage
  • 1 teaspoon rice vinegar

Directions:

1.    In a pot, cook the cabbage for a minute.  Discard the water, then, put the cabbage in a plate together with the broccoli rabe.
2.    Heat the pan and pour the olive oil.  Saute the chopped onion, chopped garlic for 4 minutes or until translucent.
3.    Add the broccoli rabe and cabbage, stir for about 3 minutes.
4.    Add the vinegar and mix thoroughly
5.    Serve

There you go, the most basic way of cooking broccoli rabe.  You can also experiment with this vegetables and pair it up with other dish.

Tips:

  • Don’t over boil the vegetable or sauté for longer than the required time.  It will affect its flavor.
  • Don’t forget to sprinkle some salt on the water before boiling.
