This fish has mild tasting meat and on top of that, it is a great source of vitamins such as vitamin B12, vitamin B6, and Selenium.  Also, mahi mahi is rich in potassium, protein, niacin, and less saturated fat content.  Because of that, you are assured that it is good for your heart, literally!

How to cook Mahi mahi on the Grill

Ingredients:

-    8 to 10 Mahi mahi fillets
-    Big onion (chopped)
-    1.5 cans of diced tomatoes
-    Bottled Garlic (minced)
-    ¼ cup olive oil
-    Salt to taste
-    ¼ cup Shredded pepperjack cheese
-    1.5 cup of dry white wine
-    1.5 cup butter
-    1 tsp grated fresh ginger
-    3 tsp finely chopped fresh cilantro
-    2 tsp black pepper (freshly ground)
-    1.5 cup squeezed lemon juice (fresh)

Cooking Directions:

1.    Season the fish fillet with salt, minced garlic, pepper, grated ginger for one hour.
2.    Prepare the pan by covering it with aluminum oil, at the same time, use butter for coating, on all sides.
3.    Put the mahi mahi fillets in the pan.  Pour the lemon juice and wine over the fish.
4.    Add the diced onions, tomatoes, and cover.
5.    Put the pan on the grill grate; allow cooking for approximately 40 minutes.


6.    Once the fish is cooked, sprinkle it with cheese while it is hot
7.    Dip with sauce of your liking
