The truth is, baby artichoke is a type of chokes that fully mature but do not grow big in size. That is why it is called baby artichoke. Ingredients:
- 14 to 16 baby artichokes
- Olive oil (1/4 cup)
- Dry white wine ( 1 cup)
- Garlic (3 cloves)
Topping essentials:
- Bread crumbs
- Salt and pepper to taste
- Finely chopped lemon zest
- 1 tsp lemon juice (fresh)
- Fresh parsley (finely chopped)
Directions:
1. Preheat the oven to 375 degrees Fahrenheit.
2. Wash the artichokes under running water.
3. Peel the stems of the chokes, and then cut off the top third.
4. Place the sliced chokes in a bowl with water and small amount of lemon to avoid discoloration while you prepare the rest.
5. Prepare a small casserole oven safe dish big enough to accommodate all the chokes. Add the olive oil, white wine and garlic.
6. Pour small amount of water if necessary, to cover almost all of the chokes.
7. Cover the casserole dish. Next, bake in the oven until they are done or approximately 20 to 30 minutes.
8. Remove the baby artichokes from the oven when the required time is up. Afterwards, increase the oven temperature to 425 degrees Fahrenheit.
9. Discard any excess liquid coming from the artichokes. Set aside.
10. In a separate bowl, combine all the ingredients for the toppings. Pour them over the chokes cooked artichokes. Drizzle small amount of olive oil.
11. Baked the chokes again in the oven until the toppings turns golden brown.
12. Serve at room temperature
