Ingredients:
- 2 pound beef tenderloin
- 5 garlic cloves (crushed)
- Salt
- Ground pepper
- Vegetable oil for coating
- 3 tbsp olive oil
Directions:
1. Remove the meat from the fridge and let it stand at room temperature for one hour before cooking. To ensure even and accurate cooking.
2. Preheat the oven to 400 degrees Fahrenheit.
3. Pat the beef meat to dry
4. Tie the tenderloin using string
5. Prepare a heavy pan and place it over a medium high heat
6. Coat the bottom of the pan with vegetable oil.
7. Put the beef tenderloin unto the hot large pan. Avoid moving it.
8. Sear the tenderloin for 2 minutes per side until a brown crust is formed.
9. Remove the meat from the pan. Set aside to cool for a few minutes or until you can tolerate handling it.
10. Massage the beef loin with olive oil, plus some salt and pepper.
11. Put the beef tenderloin in a roasting pan, then, roast for 45 minutes or until the temperature inside reaches 120 degrees.
12. When the loin is done, remove from oven. Set it aside for awhile, and cover with foil loosely for around 10 minutes.
13. You may rub the meat with chopped rosemary for flavor variations.
