Ingredients: (good for 4 servings)
- 2 tablespoon olive oil
- 1 carrot (diced finely)
- 2 celery sticks, finely diced
- 1 onion
- 1 red chili
- 4 slices pancetta
- 1 clove garlic
- 1 tablespoon tomato paste
- 1 can diced tomatoes (410g)
- 200g Italian lentils
- 2 tablespoon fresh rosemary
- 4 cups chicken stock
- Croutes
- 1 small baguette
- Half cup parmesan (grated)
Directions:
1. Heat a large pan with oil. Add the vegetables like celery, carrots, onion, garlic, pancetta.
2. Cook under low heat for 5 to 6 minutes or until the ingredients are soft.
3. Next, add the tomato paste to the mixture, and allow cooking for half a minute. It is now time to add the lentils, rosemary, tomatoes, chicken stock. Let it boil, then, lower the heat to simmer for about 40 minutes or until the soup change its consistency, and the lentils are tender.
4. Preheat the oven to 180 degrees Celsius.
5. Brush the bread with oil make croutes,then, place on a baking sheet. Bake for about 10 minutes. Wipe each side with garlic, a dash of parmesan. Bake for another 5 minutes. You may add some parsley to the soup.
6. Serve with croutes.
