Ingredients:
- 3 cups all-purpose flour
- 1.5 cups of blueberries
- 1 tablespoon baking soda
- ½ tsp salt
- 1 cup sugar
- 2 eggs (large)
- 10 tablespoon of butter (unsalted)
- 1.5 cup yogurt (plain)
- 1 tablespoon flour (for unfrosted frozen berries)
- 1 tsp lemon peel (grated)
- 1 Tbsp baking powder
Instructions:
1. Preheat oven to 375 Fahrenheit. Also, move the oven rack to the lower and middle part of the oven.
2. Whisk the baking powder, flour, baking soda and salt. Set aside.
3. In a big bowl, mix the sugar, cream butter until fluffy, then; add one egg at a time. Continue beating and toss in the grated lemon peel.
4. Stir half of the dry ingredients and add one third of the yogurt into the mixture. Then, add beat the remaining half of the dry ingredients, as well as the remaining third of the yogurt. Make sure that you don’t over beat the mixture.
5. Fold in the blueberries. For frozen berries, thaw or defrost them first. Remove the excess liquid. Next, coat them by dusting with flour.
6. When baking, utilized the standard 12-muffin tins or cups. Lightly coat each cup with butter, olive oil or any oil of your choice. Apart from that, you may also use vegetable oil sprays for convenience.
7. Equally distribute the muffin dough on each cup. Bake the muffins for 30 minutes or until they turned golden brown. To test if they are cooked, poke with a long toothpick at the center of the muffin. It should come out dry and clean.
8. Place on the wire rack for 5 minutes to cool off. Afterwards, remove from the cups, and serve the muffins.
